- 2 1/2 cups all-purpose flour

- 1 tbsp baking powder
- 1 tsp baking soda
- 8 tbsp (1 stick) cold butter, cubed
- 1 cup buttermilk
- Melted butter for brushing
Instructions
Step 1: Mix Dry Ingredients
- In a large bowl, whisk together flour, salt, baking powder, and baking soda until well combined.
Step 2: Cut in Butter
- Add the cold, cubed butter to the flour mixture.
- Using a pastry cutter or your fingers, mix until the butter pieces are about the size of peas.
Step 3: Form the Dough
- Make a well in the center of the flour-butter mixture and pour in the buttermilk.
- Mix gently until a soft dough forms, scraping the sides of the bowl to incorporate any stray flour.
Step 4: Fold for Flakiness
- Lightly flour your countertop and turn out the dough.
- Gently fold the dough into a square 2–3 times to create layers.
- Roll or press the dough to about 3/4 inch thick.
Step 5: Cut the Biscuits
- Use a 2-inch biscuit cutter to cut out biscuits. Do not twist the cutter—press straight down to maintain flaky edges.
- Place the cut biscuits on a tray.
Step 6: Chill
- Refrigerate the biscuits for 15 minutes to firm up the butter. This ensures extra flaky layers.
Step 7: Prepare the Air Fryer
- Line the air fryer basket with parchment paper or lightly spray with cooking oil.
- Place the biscuits inside; it’s okay if they touch.
- Brush the tops with melted butter.
Step 8: Air Fry
- Preheat the air fryer to 400°F (200°C) for 3 minutes.
- Air fry biscuits at 400°F for 12 minutes total:
- Flip halfway at 6 minutes.
