- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tbsp olive oil (optional, for crisping)
- 4 tbsp basil pesto (store-bought or homemade)
- 1–2 ripe tomatoes, sliced
- 4 slices fresh mozzarella cheese, or 1 cup shredded mozzarella
- Fresh basil leaves, for garnish
- Balsamic glaze (optional, for drizzling)
Instructions
Step 1: Prepare the Chicken
- Pat chicken breasts dry. Slice horizontally to make thinner cutlets if thick, or pound to an even thickness.
- Season both sides with salt and pepper. Brush lightly with olive oil if desired.
Step 2: Air Fry the Chicken
- Preheat the air fryer to 375°F (190°C) for 3 minutes.
- Place chicken in a single layer in the air fryer basket.
- Cook for 10–12 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C).
Step 3: Add Toppings
- Spread 1–2 tbsp pesto on each cooked chicken breast.
- Layer tomato slices and mozzarella on top.
- Return to the air fryer for 2–3 minutes, until the cheese melts and becomes bubbly.
Step 4: Serve
- Remove the chicken and let it rest for 2 minutes.
- Garnish with fresh basil leaves and a drizzle of balsamic glaze if desired.
