Air Fryer Caprese Chicken with Pesto, Tomato and Cheese recipe

A quick, flavorful dinner that’s ready in about 25 minutes. Crispy chicken topped with fresh tomato, mozzarella, and basil pesto—just like a classic Caprese salad in a warm, cheesy dinner form.

Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tbsp olive oil (optional, for crisping)
  • 4 tbsp basil pesto (store-bought or homemade)
  • 1–2 ripe tomatoes, sliced
  • 4 slices fresh mozzarella cheese, or 1 cup shredded mozzarella
  • Fresh basil leaves, for garnish
  • Balsamic glaze (optional, for drizzling)

Instructions

Step 1: Prepare the Chicken

  1. Pat chicken breasts dry. Slice horizontally to make thinner cutlets if thick, or pound to an even thickness.
  2. Season both sides with salt and pepper. Brush lightly with olive oil if desired.

Step 2: Air Fry the Chicken

  1. Preheat the air fryer to 375°F (190°C) for 3 minutes.
  2. Place chicken in a single layer in the air fryer basket.
  3. Cook for 10–12 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C).

Step 3: Add Toppings

  1. Spread 1–2 tbsp pesto on each cooked chicken breast.
  2. Layer tomato slices and mozzarella on top.
  3. Return to the air fryer for 2–3 minutes, until the cheese melts and becomes bubbly.

Step 4: Serve

  1. Remove the chicken and let it rest for 2 minutes.
  2. Garnish with fresh basil leaves and a drizzle of balsamic glaze if desired.

Serving Suggestions

  • Serve over pasta, quinoa, or a fresh green salad.
  • Pairs well with garlic bread or roasted vegetables for a complete meal.

Tip: For extra flavor, you can lightly season the tomatoes with salt and a sprinkle of Italian herbs before layering them on the chicken.
