Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 8 tbsp (1 stick) cold butter, cubed
  • 1 cup buttermilk
  • Melted butter for brushing

Instructions

Step 1: Mix Dry Ingredients

  1. In a large bowl, whisk together flour, salt, baking powder, and baking soda until well combined.

Step 2: Cut in Butter

  1. Add the cold, cubed butter to the flour mixture.
  2. Using a pastry cutter or your fingers, mix until the butter pieces are about the size of peas.

Step 3: Form the Dough

  1. Make a well in the center of the flour-butter mixture and pour in the buttermilk.
  2. Mix gently until a soft dough forms, scraping the sides of the bowl to incorporate any stray flour.

Step 4: Fold for Flakiness

  1. Lightly flour your countertop and turn out the dough.
  2. Gently fold the dough into a square 2–3 times to create layers.
  3. Roll or press the dough to about 3/4 inch thick.

Step 5: Cut the Biscuits

  1. Use a 2-inch biscuit cutter to cut out biscuits. Do not twist the cutter—press straight down to maintain flaky edges.
  2. Place the cut biscuits on a tray.

Step 6: Chill

  1. Refrigerate the biscuits for 15 minutes to firm up the butter. This ensures extra flaky layers.

Step 7: Prepare the Air Fryer

  1. Line the air fryer basket with parchment paper or lightly spray with cooking oil.
  2. Place the biscuits inside; it’s okay if they touch.
  3. Brush the tops with melted butter.

Step 8: Air Fry

  1. Preheat the air fryer to 400°F (200°C) for 3 minutes.
  2. Air fry biscuits at 400°F for 12 minutes total:
    • Flip halfway at 6 minutes.
    • Continue cooking until golden and cooked through.

Step 9: Serve

  1. Remove biscuits and brush with additional melted butter if desired.
  2. Serve warm with jam, honey, or alongside eggs and breakfast favorites.
